Heroes, A Princess, A Ball, and Cupcakes {i must be dreaming}

I am not dreaming.   The past two weeks have been an amazing roller coaster ride.

THE HEROES…

I cannot even begin to explain the pride I feel for these boys and their coaches.  Our hometown {homegrown} heroes.     Just a few photos  - more to come:      Northern Lebanon Wrestling Team 2017.  PIAA State Runner Up.       

THE PRINCESS

When she was 5 she was a princess everyday.  EVERDAY  the child would wear a gown and a tiara.  Now, 10 years later…she will have the chance to play dress up again.  She is a princess on the Sno Ball Court.  She was very surprised she was picked to be on the court but  even when this crazy teenager was going through her little black phase…I have always seen her as a princess.   NOT because she is the most popular,  NOT because she is beautiful {even though I think she is}, and Not because she is graceful.  This girl does not care what or who is in style.  She hates being the center of attention.  So I explained what she is not…now let me tell you what this sweet girl is….

WHAT MAKES MY GIRL A PRINCESS?  HER HEART.  I can truly say that I have never met anyone quite like her.

SHE IS KIND.  GENUINELY KIND AND EMPATHETIC.

She is a wild mess of beautiful contradictions.   She is sporty but girly.  She is country and city.

SHE WILL GO OUT OF HER WAY TO INCLUDE AN OUTCAST, SHE ALWAYS CHEERS FOR THE UNDER DOG, SHE LOVES ALL CHILDREN AND THEY LOVE HER BACK, SHE IS UNASSUMING AND AWKWARD, SHE HATES DRAMA,  SHE HAS GIVEN HER LAST DOLLAR TO HOMELESS,  SHE IS PRETTY PASSIONATE ABOUT DEFENDING THOSE THAT CAN NOT OR WILL NOT DEFEND THEMSELVES,   and if I had a dollar for every time another parent or teacher has told me that she went out of her way to help a peer in the last 15 years I would be rich.  I came across this song lyric while watching a movie and It could not be more perfect to explain this girl.  I love you {babymine}

CHOCOLATE CHIP COOKIE DOUGH CUPCAKES

I have been making these for years.   I used to love making pretty and yummy snacks for my kids in elementary school.    Seeing the kids eyes light up always made the work and time of doing it…worth it.    My kids are in High School now….they will not let me take snacks in {THE NERVE}      So when my niece came over to formally ask me to make her snack for her Valentines day party…I hugged her , teared up a little and did a happy dance!

This recipe is kind of famous and rightly so.  A vanilla cupcake with a cookie dough center with cookie dough buttercream.

Chocolate Chip Cookie Dough Cupcakes with Cookie Dough Buttercream Frosting

YIELD: 24 CUPCAKES.

Ingredients:

FOR THE COOKIE DOUGH

  • 2 sticks softened butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 4 tablespoon milk
  • 1 tablespoon vanilla
  • 2 1/2 cups all purpose flour
  • 1/4 teaspoon. salt
  • 1 cup mini chocolate chips

FOR THE CUPCAKES

  • 3 sticks softened butter
  • 1 1/2 cups light brown sugar, packed
  • 4 large eggs
  • 2 2/3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 teaspoon vanilla extract

FOR THE FROSTING

  • 3 sticks softened butter
  • 3/4 cup light brown sugar, packed
  • 3 1/2 cups powdered sugar
  • 1/2 teaspoon salt
  • 2 tablespoon milk
  • 1 teaspoon vanilla extract

Directions:

  1. To make the cookie dough, combine the butter and sugars in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 mins. Beat in milk and vanilla until incorporated and smooth. Beat in the flour and salt until just combined. Stir in the chocolate chips. Using a 1.5 tablespoon scoop, shape the dough into balls or tubes. Freeze on a parchment lined baking sheet overnight.
  2. To make the cupcakes, preheat the oven to 350° F.  Line two cupcake pans with paper liners (24 total).  In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and brown sugar.  Beat together on medium-high speed until light and fluffy, about 3 minutes.  Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
  3. Combine the flour, baking powder, baking soda, and salt in a medium bowl.  Stir together to blend.  Add the dry ingredients to the mixer bowl on low speed, alternating with the milk, beginning and ending with the dry ingredients, mixing each addition just until incorporated.  Blend in the vanilla.
  4. Using a 3 tablespoon scoop, fill the prepared cupcake liners 2/3 full with the cupcake batter. Place a frozen cookie dough ball on the top center of each cupcake.
  5. Bake at 350 for 16-18 mins.
  6. To make the frosting, combine the butter and brown sugar in a mixing bowl and cream on medium-high speed until light and fluffy.  Beat in the powdered sugar until smooth.  Beat in the salt, milk, and vanilla extract until smooth and combined.
  7. Frost the cupcakes and sprinkle with mini chocolate chips!

confessions from a FANGIRL road trip…

you try to bargain, plead, and threaten other gifts. to no avail. she.does.not.want.anything.else

i love christmas. the christmas season infects my mind (thank you baby jesus and christmas pageants and candlelight services) ,  my heart (thank you cold salvation army bell ringers)  body (thank you delicious cookies), and spirit (thank you hallmark channel and christmas lights).  i have a serious christmas infection from nov.1 thru jan 1 and  i just cannot make rational gift choices…last year i bought a puppy. a last minute gift of a real live puppy. in the aftermath, the million dollar questions i ask myself…WHY???? WHY???? WHY??? WHAT IS WRONG WITH YOU???

and as i am driving 4 hours away in cold january rain with  two 13 yr old girls…for a HUNTER ROWLAND FANGIRL ROAD TRIP… i am silently asking myself…WHY??? WHY??? WHY??? WHAT IS WRONG WITH YOU???

 

according to the urban dictionary :

fangirling

v. 1. the reaction a fangirl has to any mention or sighting of the object of her “affection”. these reactions include shortness of breath, fainting, highpitched noises, shaking, fierce head shaking as if in the midst of a seizure, etc.2. a gathering of two or more fangirls in which they proceed to waste endless amounts of time ogling, discussing/arguing, stalking, etc. the object of their “affection”

 

things i learned from this trip…

1) VIP tickets do not mean you get to go right in.  we stood in line for two hours and we had tickets.

2) i was confused about what was going on because there were a lot of girls. some were crying, screaming..screeching…running over other girls.  i was looking to the other parents present for nods of confirmation this was indeed craziness…no one nodded back.  i then told roo & riles-if they acted like that-we had to leave immediately-at least be a respectable stalker fangirl.

 

they gave him a poster. he gave them hugs and took a picture of them and put it on “his story”.   it was a very big deal in their world.   christmas wish granted.  thank you hunter rowland.

 

 after all that…going back to the hotel was heaven. seriously pure bliss and pizza delivery.


the teeny boppers even woke up from the hotel the next morning at 5:30 am for a little photo shoot before we left pittsburgh.

Jonestown Dance Portraits

It is that time of year again.  Classes of ballerinas and dancers show up at our studio all around the yard twirling, smiling, and jumping for photos…It really is magical.   We love it <3

If you are a dancer’s parent…We have a few tips to make things go smoothly!

*Have your form/payment ready to go.

*Have your dancer ready to go…decide before hand if you want your child’s dance shoes on or you would rather they go barefoot.  Have slide on shoes so they can easily get into dance shoes.

*Try to be on time…We will try to start with group photo so that once your child’s individual photos are taken…you can go.   We will take photos in order of turning in your order form to the table.

*You are welcome to bring a blanket, chair, etc to relax while you wait for your child’s turn.  We will have coloring books, paper, and a prize box for when they are done.

Gossamer Blue December Daily Album!

Hello Everyone! I’m here to share some pages and tips from my December daily Album with you! Let me tell you.. this album is awesome! I LOVE every piece in it! I love the stylish yellow striping of the album.. the mix of colorful, neutral and muted papers and journaling cards, the gold doilies and washi tape ( LOVE GOLD!) and the variety of embellishments and cool stamp set!

Missions Trip to Zimbabwe, Africa with the American Foundation for Children with Aids

My oldest daughter Katie, and I  traveled to Africa this summer… it was a life changing experience for both of us.  We made a slideshow with some of our favorite photos from the trip.
